Recipe from Candy Cane Murder by Joanne Fluke.
Combine 1 cake mix (any flavor, the book used lemon, I used caramel), 1 egg, and 2 cups of whipped topping (Cool Whip or generic equivalent). Mix until sticky, then roll into balls and coat with powdered sugar. Place on a greased cookie sheet and bake at 350°F for 10 minutes. Let cool on the cookie sheet for a few minutes before transferring to a wire rack to cook completely.
They're easy overall, as it's only 4 ingredients, but they are fussy to make. The batter is really sticky, and rolling all those balls is time consuming... and warm, when you're standing over an oven!
The cookies are very slightly crispy on the outside, very chewy and cake-like on the inside. And obnoxiously sweet! You'll definitely need a glass of milk to go along with these.
