So I've resolved to try out some new foods, and while browsing the grocery store I saw a can of Lychees. I had no idea what a Lychee was, but I figured, heck, I'll give it a try. I went on-line to find a recipe and lo and behold there was an entire site dedicated to Lychee recipes. I picked out the Lychee Sticky Muffin recipe and had at it.

A few items of note:

* I did not have any brown sugar and was too lazy to go to the store, so I used the molasses/white sugar combo, and, honestly, I could really taste the molasses. I think being made with real brown sugar would be better - unless you happen to really like molasses, in which case you'd probably love it.

* I put too much of the brown sugar mix (1 Tbsp instead of 1 tsp) in the bottom of the muffin cups and it boiled over and made an absolute mess in the oven (perhaps another reason there was so much molasses taste?)

* They really taste much better warm, I recommend re-heating any that don't get eaten fresh out of the oven!

All in all I really liked it. I thought it was a little pineapple-y, with an odd texture. My husband disliked the texture, but agreed that the recipe would be pretty good if made with apples.

Am I the only person who had no idea what they were?! I feel so fruit-deprived!

I think I may have seen "lychees" in print, but I really have no clue what they are either.

Yay! It must be the region, I gather they're not so easy to find here. And, seriously, that can was like $2.50. I think that's a bit much, compared to the price of other canned stuff!

They're not bad, if you have a chance I'd give them a try!

er, i think they're somewhat common in India? possibly why i am familiar with them methinks.
