So last night I went to buy the stuff to make a 'Pockets of Lemon' cake for a coworker's birthday. It calls for a white cake mix, lemon pie filling, lemon frosting, and whipped topping. No problem... except the store only had one brand of lemon pie filling and a can of it was (on sale) over $3.
Now, I know I could probably make the cake from scratch cheaper than the box mix (well, maybe) thogu it's iffy on the frosting (butter is expensive!). So I understand paying a little more for the convenience, but over $3 for sugar, water, cornstarch, egg yolk, butter, and lemon? No. So I made that part from scratch, and it was surprisingly easy.
I see lemon meringue pie in my future...
Also, this guy keeps calling my cell phone panicking about some fire inspection and talking to some guy called 'Mike'. I really should call him back and tell him he's got the wrong number, but I'm lazy and hate talking to people on the phone. :(
